Ken Mizumoto

Sushiman

Ken is the son of Shinji Mizumoto, founder of Shin-Zushi. In the year 2000, he decided to follow in the footsteps of his father and left for Japan in search of knowledge of authentic Japanese cuisine. For 11 years he received all the guidance, training and technique of Master Hideaki Sawamoto at Sushikan Restaurant. All stages of learning were of the more traditionalist style. He visited the 46 provinces of Japan to try local dishes and learn more about the culture behind them.
Disembarking in Brazil in 2011, with the technical improvement he received in the years he spent in Japan and together with his brother Nobu Mizumoto and his mother, gave a new personality to Shin-Zushi, achieving excellence in the preparation of authentic Japanese cuisine.
